A young Pembrokeshire chef has reached the top 10 in a national recipe contest. Carla Allen was a finalist in The Bramley Bursary, a nationwide competition challenging catering students to devise new recipes using Britain's favourite cooking apple in a commercial environment. The finalists competed against each other at Westminster Kingsway College - the prestigious college where Jamie Oliver started out - in London last week. Carla from The Tudor Lodge Restaurant, Jameston, impressed the judges with her innovative Bramley Apple Torte and striking presentation. Her practical recipe is also suitable for caterers to prepare on a budget. The expert judging panel, included representatives from catering distribution company Sodexho, The Grocer magazine, English Apples and Pears Ltd and top cookery writer Diana Henry. The winner won a once-in-a-lifetime placement in the kitchens of Michelin-star chef, Angela Hartnett, at the newly-refurbished Connaught Hotel, plus £1,000. The Bramley Bursary competition is intended to encourage the next generation of chefs to create menus that are healthy, count towards five-a-day and draw on fresh British produce.
