S A Brain and Co, the long established brewing and hospitality brand from Cardiff, has chosen another long established brand, Pembrokeshire College, as a central venue for menu testing.

Every six months Alan Cornfield, area support chef, creates and tests seasonal menus for their pubs and guest houses across Wales. The Pembrokeshire College venue is well-positioned for chefs from local Brains establishments to attend their training before their seasonal menus are rolled out to the general public.

Pembrokeshire College boasts industry standard catering facilities which are mainly used by the catering students to experience and learn about the real pressures of a professional chef’s environment. Many talented chefs from high profile restaurants and hotels, as far reaching as Cardiff, have also used the kitchens to recreate their signature dishes for the college’s speciality evenings.

“It has been great working with Pembrokeshire College to deliver menu training for our West Wales pubs.
