THREE chefs who have been selected to carry Welsh hopes in a prestigious international culinary competition in Ireland in March will be practising their culinary skills in Tenby in the New Year.

The trio, Ceri Smith, of Cardiff International Arena, Hefin Roberts, of the Waterfront Restaurant, Trearddur Bay, and Chris Cleghorn, of Llansantffraed Court Hotel, Abergavenny, will be preparing to represent the junior Welsh National Culinary Team at the International Chefs Forum in Dublin, by serving up their 'Dublin' menu at a gourmet dinner at the Fourcroft Hotel, on Friday, January 23.

Awaiting diners will be a starter of rolled fillet of salmon with a spaghetti of leeks, mussel nage and a Welsh rarebit and asparagus beignet.

The main course is roast loin of lamb over spinach and bacon cake with a medley of spring vegetables, beetroot chutney and a Wye Valley sauce.

The dinner is completed with warm chocolate tart with a raspberry panacotta and Mascapone ice cream.
