Leading British fishmonger, restaurateur and food writer Mitch Tonks will be hosting the Celebrity Fish and Shellfish Masterclass at Pembrokeshire Fish Week. The founder of 'FishWorks', Mitch (pictured) will be at the Torch Theatre on Wednesday, June 25, to challenge your ideas about cooking and eating fish. He will be joined by chef Matt Prowse to show you a world of cooking and eating fish like you have never seen before- plus tips on wines to accompany his dishes from Roy Roberts, of Celtic Wines. Mitch, who has opened 12 specialist seafood restaurants, and was recently voted Tatler's 'Restaurateur of the Year', said: "If you thought cooking fish was only for special occasions, needed a three-year training course or is fussy and complicated, then think again. "This is fish fresh off the market, simply prepared and eaten without smothering it in complicated coulis; fish grilled with lemon, olive oil and parsley, shellfish roasted in fresh tomatoes and herbs, and big sharing plates of seafood pasta. "This is fish for people who love fresh simple and tasty food to share with kids, friends, families and lovers." Also on Wednesday, June 25, as part of Fish Week, Mitch will be holding a lunchtime Tutored Tasting at The Swan Inn, Little Haven. He will be explaining the differences between seafoods, tastes and textures and how this affects cooking. There will be a fabulous selection of seafood, including local catch from spider crab to sewin, as well as other species from around the UK. A regular on BBC2's Saturday Kitchen and the author of three fish and shellfish cookery books, Mitch's career has been driven by an honest passion to enthuse, cook for and inspire others to enjoy seafood. Born in 1966, he spent the first 24 years of his life by the sea: sailing on it, skiing on it and fishing in it. After working as an accountant, he decided to fulfil his passion for seafood by opening a specialist fishmonger in Bath in 1995. In 1997, he added the Seafood Café above the shop and then began running specialist seafood cookery schools. Since then, his career has been driven by a passion to cook seafood and enthuse others to enjoy it. "Mitch is widely acknowledged as an authority on seafood, and we are really thrilled to welcome him to Fish Week," said Kate Morgan, organiser of Fish Week and food officer for Pembrokeshire County Council.
