The freshest Pembrokeshire produce will help top chef Angela Gray celebrate Welsh culinary tradition and the start of spring when she cooks in the county next month.
Saundersfoot's annual St. David's Food and Craft Festival is a favourite destination for Angela, who is looking forward to serving up some traditional tastes with a twist at her demonstrations during this year's event on Saturday, March 4, and Sunday, March 5.
"I'm going to be focusing on ingredients from Pembrokeshire, including cheeses, meat, vegetables, herbs and fruit," said Angela, who will feature new season lamb, Glamorgan sausages and leek and potato pasties in her Saundersfoot menu.
"As well as looking at some dishes that are very dear to us, I'll be celebrating Wales around the world with some anecdotes, and recipes from Patagonia."
And one recipe she will be cooking from the Welsh colony in South America is Patagonian Black Cake, which, says Angela, is 'sticky, dark and absolutely fabulous'.
With the support of Pembrokeshire County Council's food team, Angela will be staging three demonstrations daily in the festival's heated seafront marquee, where an array of stalls will offer seasonal, Pembrokeshire and Welsh produce to taste and buy, along with local crafts and goods.
The festival - organised by Saundersfoot Chamber for Tourism - would not be complete with its Cawl Cooking Championship of the World...and Elsewhere.
The contest is judged on the vote of the public, who are invited to sample the cawl created by 10 local eating establishments before casting their vote
The cawl trail takes place between 11 am and 3 pm on the first day of the festival, Saturday, March 5, when the marquee will be open between 10 am and 6 pm. The following day, Sunday, March 6, the marquee is open between 10 am and 5 pm.
