The annual Fish Week Fish and Shellfish Masterclass has been praised as a first-class example of a cookery masterclass. Chris Tanner, who runs two restaurants in Plymouth with his brother James and is a rising TV star, prepared and demonstrated several recipe ideas with fresh local fish and shellfish. The masterclass took place at the De Valence Pavilion in Tenby. Kate Morgan, organiser of Pembrokeshire Fish Week, said it was inspirational to watch Chris Tanner work. "Chris gained international expertise from working with the Roux brothers and his modern approach was very refreshing," said Kate, food officer at Pembrokeshire County Council. "He really showed how to gain the best flavours possible from the ingredients, whether for a simple meal at home, or for a more complicated dish. "It was a great opportunity to get fantastic advice on how to prepare dishes in detail and pick up really good ideas. The feedback was excellent." The masterclass includes advice on wines to accompany the dishes from Roy Roberts, of Celtic Wines. Pembrokeshire Fish Week was organised by Pembrokeshire County Council.
